Fajita Spiced Tofu

I love a good tofu recipe. And I especially love a tofu recipe that comes together in less than 20 minutes.

I typically gravitate to tofu recipes with a marinade or an Asian sauce, so this was a very welcomed change.

I will admit when I looked at the ingredients, I thought it sounded almost too basic to be good. But I was happily proved wrong. Instead of spinach, I used up some leftover bok choy and added in onion.

I served this to our 1-year-old and our 3-year-old by cutting the tofu into smaller cubes, buttering their rice and squishing the blueberries.

This littlest one loved it the most.

Tofu Reel

This works great for firm tofu. I’ve recently been buying extra firm tofu from Costco and I don’t need to drain and press it at all. It’s been great!
